Economy Gastronomy? Delicious new recipe from celebrity chef Paul Merrett
Do I have a wonderful leftover recipe for you, just perfect for a weekday night?
I do indeed!
Top chef Paul Merrett, who co-wrote the fantastic book Economy Gastronomy, has kindly donated a recipe to Love Food Hate Waste to help us waste less food and love our food even more.
Paul owns and runs The Victoria, Public house, Hotel and dining room in Sheen.
His home and his restaurant are both run using a series of lists and meal plans that allow him to maximise taste and minimise food waste. He has an unrivalled knowledge of how to feed a family on the best food without breaking the bank.
Our delicious new recipe is Chorizo Frittata. A frittata is an omelette with Sicilian origins, just as a
tortilla is an omelette with Spanish origins.
The main difference between a frittata and all the other kinds of omelette is that it is mixed, flavoured and then almost baked in the pan rather than being worked with a fork during the cooking.
This version is Paul's own concoction. "I love the way the flavours and textures complement one another. Once you have mastered the basic principle, you can have fun inventing your own version. In fact that is precisely what makes it such a good midweek supper. If you have eggs in the house and a few random bits in the fridge, you are never far from a frittata!"
