Forgotten Feasts!!

File 1013Tom Hunt is a self acclaimed eco-chef and co-founder of Forgotten Feast, working on projects throughout the UK to revive our cooking heritage and help reduce food waste. Simply put The Forgotten Feast is a restaurant that supports the ugly, the unwanted and the unloved of the food world. 

Tom was an official chef of Feed the 5000, an event in Trafalgar Square, which aims to highlight food waste by feeding more than 5000 people with delicious food that would otherwise have been wasted, and that's where Love Food Hate Waste got to know him.

His mission is to prove the value of unwanted food by using it to cook elaborate and lavish banquets. He also has a popular blog of sustainable videos and recipes and has kindly donated three of these recipes to Love Food Hate Waste so that we can recreate these Forgotten Feasts in our own homes.

  1. File 1012Mis-fit veg with babaganoush. A lot of perfectly good veg is wasted in our homes so this is a great way to use up anything lying about in the fridge. Mediterranean veg is really tasty char-grilled and goes superbly with babbaganush
  2. File 1014Roasted Jerusalem Artichokes with Parsnips, Desiree potatoes and Rosemary. This is a superbly simple way to cook Jerusalem artichokes which are now coming into season. Roasted with other delicious root veg, they tend to caramelize a little more than their other friends giving them a nutty chewiness that is most satisfying. You can eat them as they are or serve up with some wilted kale and carrots to make a full meal. 
  3. File 1015Celeriac and squash salad. This salad is punchy and full of healthy veg that will pick you up and carry you through the long autumn/winter evenings.

I have a plot of artichokes on the allotment and am always looking for ways to use them so this is definately a recipe I'll be making at the weekend. Unfortunately my squash didn't work (big plants - no squash!) but I'll be buying a couple when they're cheap and in season and put them to good use on these recipes. The great thing is that all of these recipes can use a wide variety of veg which we just have lying around in the fridge and would otherwise go to waste. Perfect!
